French Onion Crustless Quiche

Ingredients

  • 1 tbsp oil

  • 2 brown onions thinly sliced

  • 2 tsp brown sugar

  • 1 packet French onion soup mix

  • 1/4 cup self raising flour

  • self raising flour 1 1/2 cups

  • 4 eggs

  • Grated cheese 1 1/2 cups 

  • Fresh thyme leaves (optional)

Method

1. Heat oil in a large frying pan over medium heat. Add onion and cook, stirring occasionally. Add the sugar and cook stirring 2-3 minutes. Set aside to cool.

2. Preheat oven to 180C/160C fan forced. Grease a casserole dish. In a large bowl combine the soup mix & flour. Make a well in the centre and gradually add milk & eggs, stir until combined. Stir in onion mixture & cheese.

3. Pour mixture into the greased dish and sprinkle with thyme if desired. Bake for 50 minutes or until the top of puffed and golden and slightly firm to touch. Cool slightly, sprinkle with more thyme (optional). Serve with salad leaves or wedges.
