Sweet Corn Chowder

Ingredients:
2 teaspoons cooking oil
1 onion
1 can creamed corn.
1 can potatoes
1- 2 chicken or
vegetable stock cubes
300 mls water
Chilli flakes
Black pepper
Method
Heat oil in a large saucepan, dice onion then gently fries until softened and lightly browned, stirring regularly
Drain potatoes cut into quarters add to onions with the can of sweet corn and 300 mls of water and stock cubes to taste
Stir to combine sprinkle chilli flakes to desired taste then stir well. Bring to a simmer, cook for 5 minutes. Season with black pepper and serve.
OPTIONAL: Add a quarter of a BBQ chicken shredded to the dish.
