Sweet Corn Chowder

Ingredients:

  • 2 teaspoons cooking oil

  • 1 onion

  • 1 can creamed corn.

  • 1 can potatoes

  • 1- 2 chicken or 

      vegetable stock cubes

  • 300 mls water

  • Chilli flakes

  • Black pepper

Method

  • Heat oil in a large saucepan, dice onion then gently fries until softened and lightly browned, stirring regularly

  • Drain potatoes cut into quarters add to onions with the can of sweet corn and 300 mls of water and stock cubes to taste

  • Stir to combine sprinkle chilli flakes to desired taste then stir well. Bring to a simmer, cook for 5 minutes. Season with black pepper and serve.

  • OPTIONAL: Add a quarter of a BBQ chicken shredded to the dish.
