Lentil Bolognese and Spaghetti

Ingredients:

  • 1 packet of spaghetti

  • 1 tin lentils

  • 2 tsp olive oil

  • 1 onion, diced or shredded

  • 4 cloves garlic

  • ½ cup shredded carrots

  • ¼ tsp thyme

  • 2 tbsp mixed herbs

  • ½ tsp salt

  • 1 pasta sauce jar

Method:

  • Cook spaghetti according to packet instructions

  • Sauce: Heat frying pan over med heat, add oil, garlic & onion. Add dash of salt and cook for 4mins. Add carrots, herb and salt. Cover and cook for 5min - stir in between.

  • Rinse and drain lentils.

  • Add sauce jar, lentils, and herbs of choice. Bring to boil, simmer for 5mins. Taste and adjust flavor.
