Minestrone Soup

Ingredients:

  • 1 onion

  • 1 potato 

  • 2 carrots

  • 1 tin chopped tomatoes

  • 1 tin 3 bean mix

  • 1 tin butter beans

  • 1/4 cabbage shredded

  • 1 chicken or vegetable stock cubes

  • One and a half cups of cooked rice

  • 800 mls water

  • 1 teaspoon mixed herbs

  • 2 teaspoons oil

Method:

  • Cook 1 and ½ cups rice, drain and stand aside.

  • Peel potato and carrots and cut into small cubes and shred cabbage.

  • In a large saucepan heat oil and cook onion gently until softened and lightly browned.

  • Add chopped tomatoes and potato refill tomato tin twice with cold water (800mls) adding to saucepan.

  • Add chicken or vegetable stock cubes ,mixed herbs, potato, carrot and cabbage and bring to a simmer, let simmer until these vegetables have softened .

  • Drain the mixed beans and butter beans rinse well. Add to pan along with the cooked rice or pasta simmer a further 3-5 minutes until heated through. Season with salt and pepper.
