Apricot Chicken, Veg and Rice

Ingredients:

  • Apricot chicken recipe base

  • 500 grams chicken thigh fillets cut into strip's

  • 1 can apricot halves

  • 1 onion

  • 1 can Peas and corn

  • Water 

  • Rice

Method:

  • Drain apricots reserving juice (1 cup)

  • Heat 2 tsps oil in a large saucepan add onion, brown chicken, 

  • Cook for 2 minutes

  • Combine recipe base with reserved juice mixture and add to chicken along with apricot halves. Bring to the boil stirring.

  • Cover and simmer for 15 minutes, drain peas and corn and add to simmering mixture. Simmer for a further 15 minutes stirring occasionally.

  • Cook rice as per packet instructions.
