Apricot Chicken, Veg and Rice

Ingredients:
Apricot chicken recipe base
500 grams chicken thigh fillets cut into strip's
1 can apricot halves
1 onion
1 can Peas and corn
Water
Rice
Method:
Drain apricots reserving juice (1 cup)
Heat 2 tsps oil in a large saucepan add onion, brown chicken,
Cook for 2 minutes
Combine recipe base with reserved juice mixture and add to chicken along with apricot halves. Bring to the boil stirring.
Cover and simmer for 15 minutes, drain peas and corn and add to simmering mixture. Simmer for a further 15 minutes stirring occasionally.
Cook rice as per packet instructions.
