Cheesy Beef Taco Rice Bake

Ingredients

  • 1 tbsp oil

  • 500g mince

  • 1 capsicum, deseeded & chopped

  • 1 red onion, chopped

  • 1 pkt Taco seasoning 

  • 2 tbsp tomato paste

  • 1 ½ Long grain rice

  • 1 can black beans, drained

  • 1 chicken stock cubes

  • 11/2 cups Grated cheddar or mexican cheese


Method:

1. Preheat oven to 200C/ 180C fan forced. Heat oil in a frypan over medium heat & cook mince for 5 minutes. Move mince to side of the pan & add onion and capsicum. Cook stirring for 5 minutes.

2. Stir Beef and onion mixture together until combined & add seasoning with tomato paste. Cook stirring for 1 minute then add the rice, stir until combined then add beans, crumbled stock cube & 750mls(3cups) water, bring to boil.

3. As soon as starts to boil transfer to a small baking dish. Cover with foil. Bake for 25 minutes or until the liquid has absorbed and rice is tender. Sprinkle with cheese & bake uncovered for a further few minutes or until the cheese has melted. Top with sour cream and avocado, season and serve.
