Asian Fried Rice

Ingredients:

  • 1 tin brown lentils, rinsed and drained

  • 1 tin mixed veggies, drained

  • 2 cups rice

  • 1 onion

  • 2 eggs

  • Splash of sesame oil

  • 1 tbsp butter/margarine/cooking oil

Method:

  • Boil rice in water in a pot

  • Meanwhile, dice and fry onion in a large frying pan on low heat with butter

  • Once brown, add the lentils and mixed veggies to the frying pan and turn to medium heat. Fry until slightly charred

  • Once rice is cooked, drain and rinse under cold water. Then drain again.

  • Crack 2 eggs directly into the frying pan and stir thoroughly.

  • Add the cold rice and stir well 

  • Add the splash of sesame oil and stir 

  • Once rice warms up again, serve
