Baked Porridge

An easy baked meal that works great for a quick breakfast for days to come.


Ingredients

  • Rolled oats 2 cups

  • Honey 3 tbsp

  • baking powder 1 teaspoon

  • salt 1/4 teaspoon

  • milk 2 cups

  • Ground cinnamon 1 teaspoon

  • 1 egg

  • Fruit fresh or tinned 2-3 fresh/1 tin

  • butter 50g


Method

  1. Preheat the oven to 180c, grease baking dish

  2. Chop fruit and lay on the dish base

  3. Mix honey, milk and egg together

  4. Scatter oats and baking powder over fruit

  5. Pour over the wet ingredients and cut butter into small knobs and dot over the top.

  6. Bake in the oven, uncovered for 40 mins until firm and golden.

  7. Let it cool in the pan for 5 mins before cutting into pieces. Store in the fridge.

  8. Serve warm with yogurt or toppings of your choice.
