Sweet and Sour Pork Sausages

Ingredients:
8 BBQ pork sausages
1and a half cups rice
1 teaspoon oil
1 small green capsicum cut into 2cm pieces
1 jar Sweet and Sour simmer sauce
1/2 a large (425 grm)can of pineapple pieces drained.
1/4 cup water
Method:
Cook rice. Heat the oil in a large frypan over medium-high heat and cook sausages turning for 5-6 minutes until browned. Take out and slice diagonally.
Place the capsicum in the pan over medium to high heat cook stirring occasionally until capsicum starts to brown. Add simmer sauce, drained pineapple pieces and 3/4 cup of water. Stir to combine.
Add cut sausages stir to coat. Bring to the boil then reduce heat to low. Simmer stirring occasionally for 10 minutes. Serve with rice.
