Baked Beef and Rice

Ingredients:

  • 2 packets of veggie stock powder

  • 3 cups water

  • 1 onion, chopped or shredded

  • 1 can of tomatoes

  • 1 ½ cups rice

  • 1 tin corn

  • 1 tin mixed veg

  • ½ tsp mixed herbs

  • 500g beef mince

Method:

  • Preheat the oven to 180°C and lightly grease a baking dish to prevent sticking.

  •  Add all ingredients to the baking dish and stir well to ensure everything is evenly combined and the rice is fully submerged in the liquid.

  •  Cover the dish tightly with a lid or foil to trap steam, which helps the rice cook evenly.

  •  Place in the oven and bake for 50 minutes, or until the rice is tender and most of the liquid has been absorbed.

  •  Remove from the oven and allow the dish to rest for 5 minutes. Fluff the rice gently with a fork to separate the grains, then serve warm.
