Baked Beef and Rice

Ingredients:
2 packets of veggie stock powder
3 cups water
1 onion, chopped or shredded
1 can of tomatoes
1 ½ cups rice
1 tin corn
1 tin mixed veg
½ tsp mixed herbs
500g beef mince
Method:
Preheat the oven to 180°C and lightly grease a baking dish to prevent sticking.
Add all ingredients to the baking dish and stir well to ensure everything is evenly combined and the rice is fully submerged in the liquid.
Cover the dish tightly with a lid or foil to trap steam, which helps the rice cook evenly.
Place in the oven and bake for 50 minutes, or until the rice is tender and most of the liquid has been absorbed.
Remove from the oven and allow the dish to rest for 5 minutes. Fluff the rice gently with a fork to separate the grains, then serve warm.
