Bean & Rice Burrito Wraps

Ingredients:

  • 1 cup cooked rice

  • 1 can black beans or kidney beans

  • Tortilla wraps

  • 2 tbsp Bolognaise sauce or salsa

  • ½ tsp mixed herbs

  • ½ can canned corn

  • Cheese - as desired

Method

  • Cook rice: Boil 1 cup rice with 2 cups water & a pinch of salt, then cover and simmer on low for 10–15 minutes.

  • Heat beans: Drain canned beans & corn and heat in a pan over medium.

  • Season: Stir in salsa, mushrooms & mixed herbs, cook 3–4 minutes.

  • Mix filling: Add 1–1½ cups cooked rice to the beans and cook 2–3 minutes until hot.

  • Assemble: Spoon filling into wraps, add optional cheese or hot sauce, fold in sides, and roll into burritos.
