Chicken Ramen

A super quick and easy ramen-based meal that feeds the whole family.


Ingredients (serves 4)

  • 2 packets ramen noodles

  • 1 onion - slice

  • 2 cloves garlic - slice

  • 1 carrot - chop

  • 1 red capsicum - chop

  • Bunch of bok choy, kale or cabbage - tear or chop

  • Can substitute vegetables for whatever you have available

  • 200 - 500g chicken - cut into mouth size pieces

Method

  1. Fry the onions and garlic for about 3 mins

  2. Add chicken and fry until white all the way through

  3. Add carrots and peppers for 2 mins

  4. Push chicken and vegetables to one side of the pan and add 1 1/2 cups of water

  5. Add noodles for 30 seconds

  6. Turn noodles for another 45 seconds

  7. Add flavour sachets and splash of soy sauce or sweet chilli sauce or both

  8. Stir in green vegetables , mix and then divide into bowls
