One-Pot Cheesy Rice

Ingredients:
1 cup rice
1½ cups long-life milk
½ cup grated long-life cheese or cheese sauce
1 tsp mixed herbs
1 cup chicken or vegetable stock
1 can mixed vegetables
Salt, pepper
Method
Combine rice, milk, chicken stock, dried herbs, and a pinch of salt.
Bring to a gentle boil, then reduce heat to low and cover. Simmer for 15–20 minutes, stirring occasionally
Stir in the drained canned vegetables and heat through for 3–5 minutes.
Remove from heat and mix in the grated cheese until melted and creamy.
Adjust seasoning with pepper and
extra herbs to taste.
