One-Pot Cheesy Rice

Ingredients:

  • 1 cup rice

  • 1½ cups long-life milk

  • ½ cup grated long-life cheese or cheese sauce

  • 1 tsp mixed herbs

  • 1 cup chicken or vegetable stock

  • 1 can mixed vegetables

  • Salt, pepper

Method

  • Combine rice, milk, chicken stock, dried herbs, and a pinch of salt.

  • Bring to a gentle boil, then reduce heat to low and cover. Simmer for 15–20 minutes, stirring occasionally

  • Stir in the drained canned vegetables and heat through for 3–5 minutes.

  • Remove from heat and mix in the grated cheese until melted and creamy.

  • Adjust seasoning with pepper and 

  • extra herbs to taste.
